3 tbsp Noshejan Taco Zindagi

16 oz pasta shells

1 yellow onion, diced

6 cloves garlic, minced

1 tbsp chopped chipotle in adobo sauce plus 2 tbsp adobo sauce

1 can of corn

1/2 cup chopped cilantro

3 cups shredded Pepper Jack cheese plus 1 cup for topping
Instructions
Heat the oven to 425°. On a sheet pan, place the chicken thighs and drizzle with olive oil. Sprinkle with 2 tbsp Noshejan Taco Zindagi. Cook for 40 minutes or until internal temperature is 165°. Allow to cool, then shred.
While the chicken is cooking, cook the pasta according to package instructions. When done cooking, save 1/4 cup of the pasta water.
Heat a skillet on medium-high heat and add 2 tbsp olive oil. Sauté onion for 3 minutes and add the garlic, cooking for one more minute.
Grease a 9x13 casserole dish. In a large mixing bowl, combine the chicken, pasta, onion, garlic, chipotle, adobo sauce, corn, half the cilantro, pasta water, and 3 cups of cheese together in the casserole dish. Mix well. Pour into the casserole dish.
Top with remaining cheese and sprinkle with Noshejan Taco Zindagi.
Bake for 15-20 minutes, until cheese is bubbly. Top with remaining cilantro.
