Ingredients
2 lbs chicken wings
Olive oil for drizzling
4 tbsp Noshejan Fuego Fandango
2 cups pineapple juice
6 cloves garlic, minced
1 shallot, shredded
1 tsp shredded fresh ginger
1 tbsp cornstarch
1/4 cup chopped cilantro
Instructions
Preheat the oven to 425°. Pat the chicken wings dry and put them into a mixing bowl. Drizzle the chicken wings with olive oil and add 2 tbsp Noshejan Fuego Fandango. Mix well so each chicken wing is evenly coated.
On a lined baking sheet, bake the chicken wings for 40 minutes.
While the chicken is cooking, make the sauce. Add pineapple juice, garlic, shallot with liquid, ginger, and 2 tbsp Noshejan Fuego Fandango in a sauce pot. Mix well and bring to a boil over medium-high heat. Once boiling, reduce heat to medium-low and simmer for 10 minutes.
Add the cornstarch and two spoonfuls of the sauce to a small bowl. Mix well until smooth. Add the mixture to the sauce, mix well, and bring the heat up to medium-high. Cook until the sauce thickens, then remove from heat, about 5 minutes.
Turn the oven to the broil setting and place the oven rack to the broil position.
In a large mixing bowl, add the chicken and sauce. Toss well, coating evenly.
Return the wings to the baking sheet and broil until browned, about 3 minutes.
Garnish with cilantro and serve hot.
