Ingredients

8 eggs, whisked

1 onion, diced

1/2 cup diced red bell pepper

6 cloves garlic, minced

1 lb ground pork

2 tbsp Noshejan Taco Zindagi

2 cups frozen hashbrowns

1 cup shredded Pepper Jack

1 cup cooked black beans

1 medium tomato, diced

2 tbsp diced shallot
-
1 avocado, diced

2 green onions, sliced

6 burrito size flour tortillas

Instructions
In a medium-sized pan, melt 2 tbsp butter over medium heat. Add the eggs and scramble for three minutes. Set aside.
In a large pan, add 2 tbsp butter and melt. Add the onion and bell pepper, cooking for three minutes. Add the garlic and cook for one more minute. Set aside.
In the same pan, add the ground pork and cook until no longer pink, about 8-10 minutes, stirring and breaking up large pieces often. Add the onions, bell pepper and garlic mixture back to the pork and add Noshejan Taco Zindagi and mix well. Set aside.
Heat the remaining 2 tbsp butter in the same pan over medium-high heat. Add the hashbrowns, pressing flat. Cook for 5 minutes. Flip and cook for another 5 minutes. Set aside
Assemble the burritos! Evenly distribute the pork mixture down the center of each tortilla. Add the scrambled eggs and hashbrowns. Top each evenly with pepper jack cheese, black beans, tomato, shallots, avocado, and green onion. Sprinkle with Noshejan Taco Zindagi. Fold tightly.
Heat one tbsp olive oil per burrito in a pan over medium heat. Working in batches of about two burritos at a time, place folded side down and cook until golden. Flip and repeat.
