Chicken Quesadilla

Ingredients

  • 4 boneless, skinless chicken thighs

  • Olive oil

  • 2 tbsp Noshejan Taco Zindagi

  • 1 onion, sliced

  • 1 red bell pepper, seeded and sliced

  • 3 cloves garlic, minced

  • 2 cups shredded Pepper Jack cheese

  • 4 flour tortillas

  • 1 cup guacamole

  • 1 cup sour cream

  • 1/4 cup chopped cilantro

  • 1/4 cup sliced green onion

  • 1 jalapeño, sliced

 

Instructions

In a medium-sized skillet, heat 2 tbsp olive oil over medium heat. Season the chicken thighs with Noshejan Taco Zindagi, rubbing on both sides.

Add chicken thighs and cook for 7 minutes. Flip and cook for another 7 minutes. The chicken is done when they’re no longer pink and the internal temperature reaches 165°. Cut into thin, bite-sized pieces and set aside.

Add 2 tbsp olive oil in the same pan and heat on medium-high heat. Add the onion and bell pepper. Cook for three minutes and add the garlic. Cook for one minute and set aside.

Assemble the quesadillas! Fill each tortilla on one half with chicken, onion mixture, and cheese. Fold over in half. Fry in a skillet with 2 tbsp oil for each quesadilla being cooked per batch. When the tortilla becomes golden brown, flip and continue until the other side is golden brown.

Serve with guacamole, sour cream, cilantro, green onion and jalapeño. Sprinkle Noshejan Taco Zindagi.
