Preheat the oven to 450°. Pat the game hens with paper towels to dry the skin completely. Gently separate the skin from the meat on the breast and dry underneath as well.
Mix the softened butter together with 2 tbsp Noshejan Lobo Rojo Adobo. Divide the mixture in half and rub one half on one game hen and the other half on the second game hen. Make sure also to rub the butter mixture under the skin.
Place the potatoes, onions, and garlic in a roasting pan. Mix well and distribute evenly throughout the pan. Drizzle with olive oil and sprinkle with the remaining Noshejan Lobo Rojo Adobo.
Place one lemon quarter in each hen and place the hen in the roasting pan on top of the vegetables. Tie the legs together using kitchen twine.
Cook, uncovered for 20 minutes. Lower the heat to 375° and cook for another 30 minutes or until the internal temperature is 165°.
Remove from the oven and allow to rest for 10 minutes. Serve whole if serving two people, or cut in half lengthwise if serving four people. Serve with the remaining lemon wedges to squeeze over the meat.
