Ingredients
2 tbsp olive oil
1 lb sweet Italian sausage
1 shallot, diced
6 garlic cloves, minced
2 tbsp Noshejan Bacio Italiano
1 cup heavy whipping cream
1 cup chicken bone broth
1/4 cup chopped sun-dried tomatoes
1 tbsp miso paste
1/2 cup mascarpone cheese
1 lb gnocchi, cooked according to package instructions
10 oz baby spinach
1 cup shredded mozzarella
1 cup freshly shredded Parmesan
Instructions
Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the sausage and shallot, breaking it up as it cooks and mixing well. Cook for 10 minutes. Add the garlic and Noshejan Bacio Italiano, mix well, and cook for 1 minute, stirring often.
Reduce heat to medium and add the whipping cream, bone broth, sun-dried tomatoes, miso paste, mascarpone, and gnocchi. Mix well and cook for 8 minutes, stirring often.
Add the baby spinach, combining well with the gnocchi and sauce. Cook until wilted but still bright green, about 2 minutes.
Remove from heat and stir in the mozzarella, mixing well and allowing to melt.
Top with Parmesan and serve hot.
