Ingredients
4 tbsp butter
1 large onion, diced
6 cloves garlic, minced
1 cup orange juice
1/2 cup cooking sherry
2 26oz pkgs chopped tomatoes
2 cups chicken bone broth
1/2 cup basil, chiffonade
3 tbsp Noshejan Bacio Italiano
2 tbsp coconut sugar
1 Parmesan cheese rind
1 cup heavy whipping cream
Grated Parmesan cheese for garnish
Instructions
In a heavy-bottomed pot, heat the butter over medium heat. Add the onion and cook until caramelized about 30 minutes. Add the garlic and cook for one more minute.
Increase heat to medium-high. Add the orange juice and sherry. Mix well.
Add the tomatoes, bone broth, half of the basil, Noshejan Bacio Italiano, sugar, and cheese rind. Bring to a boil, cover, and reduce heat to medium-low. Cook for 20 minutes.
Uncover and remove the rind. Blend the soup with an immersion blender until smooth.
Increase heat to medium-high and add the cream. Stir well and remove from heat when heated through.
Serve hot, garnished with remaining basil and parmesan cheese.
