Ingredients
2 lbs boneless, skinless chicken thighs
4 tbsp Noshejan Montreal Magique
4 tbsp olive oil
1 large red onion, quartered & sliced
1 tbsp butter
1 red bell pepper, seeded, quartered & sliced
1 cup chopped, fresh green beans
8 garlic cloves, sliced
1 26 oz package chopped tomatoes, with juice
1 tbsp rice vinegar
1 cup chicken broth
2 cups uncooked orzo
1/4 cup coconut flakes
Instructions
Preheat the oven to 350°.
Dry the chicken thoroughly with paper towels. Season with 2 tbsp Noshejan Montreal Magique, coating each piece thoroughly on both sides.
In a Dutch oven or similar oven-safe pot, heat the olive oil over medium-high heat.
Working in batches if needed, add the chicken and brown on both sides, about 2 minutes per side. Remove from heat and set aside.
In the same pot, add the onion and butter. Cook for 5 minutes, stirring often. Add the bell pepper and green beans and cook another 2 minutes, stirring often. Add the garlic and cook for one more minute.
Add the tomatoes with juice, rice vinegar, remaining Noshejan Montreal Magique, and broth. Mix well. Bring to a boil.
Add the orzo and mix well. Add the chicken and any resting juices. Mix well.
Transfer the pot to the oven and cook uncovered for 25 minutes, ensuring the chicken's internal temperature reaches 165°. Remove from heat and let sit for 5 minutes.
