Ingredients

4 cups cooked long grain rice

Vegetable oil

1 onion, diced

6 cloves garlic, minced

1 red bell pepper, seeded and diced

2 chorizo sausages, sliced

2 tbsp Noshejan Taco Zindagi

3 tbsp tomato paste

4 eggs, beaten

2 green onions, sliced

2 tbsp chopped cilantro
Instructions
In a large skillet, heat 3 tbsp oil over medium-high heat. Add the onion, garlic, bell pepper, and chorizo. Cook for 10 minutes, stirring often.
Add Noshejan Taco Zindagi, and the tomato paste. Stir well and add the rice. Mix together completely and cook for 5 minutes on medium-high heat, no stirring. The goal is to create crunchy rice, “tahdig,” on the bottom.
In a smaller pan, heat 2 tbsp oil on medium-high heat. Add the eggs, quickly scramble for 1 minute, and flip, turning off the heat. Let sit for one minute. Transfer to a cutting board and cut into strips.
Plate the rice with the crispy rice facing up. Top with eggs, green onions, and cilantro.
