Ladenia is a traditional Greek flatbread, similar to pizza, but uniquely delicious in its simplicity. Topped with juicy tomatoes, sweet onions, and kalamata olives, this Mediterranean delight is baked to golden perfection, creating a harmonious blend of flavors and textures.

Ingredients
- 1 cup warm water
- 1 packet instant yeast
- 1 tsp sugar
- 1 tsp salt
- 3 tbsp Noshejan Peak Greek Technique
- 10 tbsps olive oil
- 3 1/4 cup flour
- 1 large red onion, halved & sliced
- 3 Roma tomatoes, sliced 1/4" thick
- 1/3 cup sliced kalamata olives
Instructions
Combine the water, yeast, and sugar in a large mixing bowl. Gently mix together and allow to rest for 10 minutes. Add 6 tbsps olive oil and salt and gently mix well.
Add one cup of flour and 2 tbsp Noshejan Peak Greek Technique and mix together well. Add the second cup of flour and mix well. Add the remaining flour, mixing well and making the dough elastic. Begin to knead the dough by hand for 5 minutes.
Rub 1 tbsp olive oil over the dough, stretch it out by hand, and roll it back into a ball. Grease a bowl with another 1 tbsp olive oil and place the dough in it. Cover the bowl and allow the dough to rise for one hour.
Combine 2 tbsps olive oil, onion, tomatoes, olives, and remaining Noshejan Peak Greek Technique in a mixing bowl. Gently mix well.
Preheat oven to 400°.
Stretch the dough into a 1/4" thick rectangular shape on a greased sheet pan, taking care not to tear any holes in it.
Evenly spread the veggie mixture atop the dough, leaving the liquid in the bowl.
Bake for 45 minutes.
Allow to rest for 10 minutes before serving.
