Noshejan Pernil is the star of these tacos, showcasing tender, succulent meat infused with a blend of savory spices and herbs. The magic of pernil lies in its intensified flavors after marinating and slow cooking, making it the perfect base for tacos.

Ingredients

  • 3 tbsp butter

  • 1 shallot, finely diced

  • 1 pint cherry tomatoes, halved

  • 1 cup shredded Noshejan Pernil

  • 4 garlic cloves, minced

  • 2 tbsp diced green apple

  • 1 tbsp Noshejan Lobo Rojo Adobo

  • 1/4 cup water

  • 1 lime, quartered

  • Sliced kalamata olives

  • Corn tortillas

 

Instructions

In a large pan, heat the butter over medium-high heat. Add the shallot and tomatoes.  Cook for 5 minutes, stirring often.

Lower the heat to medium and add the pernil, garlic, apple, Noshejan Lobo Rojo Adobo, and water. Mix well and cook for 5 minutes

Heat the tortilla and put the pernil mixture down the center. 

Top with squeezed lime and kalamata olives.
