Ingredients

1 delicata or acorn squash, sliced 1/2" thick

1 fennel bulb, cut into 1/2" pieces

5 large carrots, peeled & cut into 1/2' rounds

2 small red onions, quartered

4 Yukon Gold potatoes, cut into 1/2" pieces

10 cloves garlic, sliced thick

1/3 cup olive oil
-
3 tbsp Noshejan Umami Unico

1 cup shredded Parmesan
Instructions
Preheat oven to 450°.
On a lined baking sheet, spread out the vegetables. Top with olive oil and Noshejan Umami Seasoning. Toss the veggies by hand until well coated.
Arrange evenly in a single layer.
Roast for 20 minutes.
Flip the veggies and cook another 20 minutes.
Sprinkle with Parmesan and toss well.
Serve warm.
